A fragrant lamb leg roast studded with rosemary and garlic is a high protein, Mediterranean-inspired family holiday classic. This tender, flavorful roast makes an elegant centerpiece.
Preheat the oven to 350°F (175°C). Pat the lamb leg dry and let it sit at room temperature for 30 minutes to ensure even roasting.
Using a sharp paring knife, cut 16 small slits evenly around the lamb. Insert a half garlic clove and a small rosemary sprig into each slit for even flavor infusion.
Rub the entire surface of the lamb leg with olive oil, then season generously with kosher salt and black pepper.
Place the lamb on a rack in a roasting pan. Roast uncovered in the center of the oven for about 1 hour 45 minutes to 2 hours (20 minutes per pound), until a meat thermometer inserted into the thickest part registers 135°F for medium-rare.
Remove the roast from the oven, tent with foil, and rest for 20-30 minutes before slicing to lock in juices.
