Chorizo and egg stuffed into a crusty roll makes a hearty Mexican breakfast sandwich. This high protein, family-friendly dish is a fresh, bold, satisfying start to the day.
Preheat a large skillet over medium heat. Add the chorizo and cook, breaking it up, until well-browned and cooked through, about 6–8 minutes. If excess fat accumulates, drain some for a less greasy sandwich.
Push the chorizo to one side. Crack the eggs into the pan and scramble together with the chorizo, stirring gently and cooking until just set but still moist, 3–4 minutes. Season with salt and black pepper.
While eggs cook, slice bolillo rolls in half and toast them cut-side down on a dry skillet or oven until lightly crisped, 2–3 minutes.
Spread about 1/4 cup of refried beans onto the bottom half of each toasted roll. Layer the chorizo-egg mixture evenly over the beans.
Top with sliced avocado, tomato, shredded romaine lettuce, and a spoonful of pickled jalapeños. Cover with the top half of the roll. Serve immediately while the filling is hot, pressing gently to compact the sandwich.
