Add the onion and sauté gently for 4–5 minutes until translucent, being careful not to brown.
Add the fermented turnips and bay leaf; stir, then cook covered over low heat for 30 minutes to allow flavors to meld and reduce excess moisture.
Meanwhile, simmer the cotechino sausage in water for 45 minutes over gentle heat, making sure not to boil to avoid splitting.
Remove cotechino from water, slice into thick rounds, and arrange atop the warm brovada mixture. Season everything with salt and black pepper before serving immediately.
