New Year's tripe soup is a traditional remedy and celebration dish for the first day of the year. This high protein, healthy, family dish is a fresh, warming way to start the new year.
Thoroughly rinse the beef tripe under cold running water, then cut into 2-inch pieces for uniform texture.
Place tripe, beef shank, onion, garlic, carrot, and bay leaves in a large stockpot; cover with 4 quarts water and bring to a boil over medium-high heat. Skim foam as it rises.
Reduce heat to low and simmer gently for 2 hours, keeping the lid slightly ajar to allow steam escape, maintaining the broth clarity.
Add hominy, salt, black pepper, and dried oregano to the pot. Stir well, cover, and continue simmering gently for another 90 minutes, until tripe and beef are fork-tender.
Remove bay leaves and beef shank. Slice beef shank, then return to the pot. Adjust seasoning with chili flakes and fresh cilantro. Simmer uncovered for 15 minutes to allow flavors to meld, then serve hot with lime wedges.
