Heat a large skillet or wok over medium-high heat, add sesame oil, and stir-fry onions, carrots, and mushrooms for 2–3 minutes until just softened.
Add bell pepper and garlic, then continue stir-frying for 1 minute, maintaining high heat to keep vegetables crisp.
