Thick corn masa pockets stuffed with various fillings are a beloved Mexico City street food. This family-friendly, protein-rich dish is a fresh, satisfying snack or meal option.
In a large bowl, combine masa harina, salt, and warm water. Mix thoroughly until a moist but non-sticky dough forms. Knead for 2-3 minutes to develop structure.
Divide the dough into 6 equal balls. Flatten each ball into a disk about 3/4 inch thick, taking care to keep the edges smooth and even.
Heat a large nonstick skillet or griddle over medium heat. Cook each disk for 2-3 minutes per side until lightly golden and just set, adjusting heat to avoid burning.
Carefully transfer gorditas to a plate and wrap with a clean kitchen towel. Let rest for 5 minutes to allow centers to steam and finish cooking.
Using a sharp paring knife, slice open the edge of each gordita to form a pocket, keeping one side intact. Spoon refried black beans, shredded chicken, and queso fresco into each pocket. Top with shredded lettuce, crema, salsa verde, and a sprinkle of black pepper. Serve warm.
