Chole is a robust Punjabi chickpea curry with a tangy, spiced tomato-onion gravy. This high protein, fiber-rich vegetarian dish supports weight loss, is DASH-friendly, and is a family kitchen essential.
Heat 2 tbsp vegetable oil in a large pot over medium heat. Once hot, add cumin seeds and let them crackle for 30 seconds to release their aroma.
Add the finely chopped onions and sauté over medium-high heat for 5–6 minutes, stirring occasionally, until deep golden brown to build the flavor base.
Stir in the minced garlic and grated ginger; cook for 1–2 minutes until the raw smell disappears, maintaining medium heat to prevent burning.
Add chopped tomatoes, coriander powder, chili powder, turmeric, and salt. Cook over medium heat, stirring often, until tomatoes break down and oil begins to separate, about 7 minutes.
Add chickpeas and 1.5 cups water. Stir well, bring to a gentle boil, reduce heat to low, cover, and simmer for 18–20 minutes to help the flavors meld and thicken the curry.
Uncover, stir in garam masala and lemon juice. Simmer uncovered for 2–3 minutes to allow the flavors to finish marrying. Serve hot.
