Preheat the oven to 375°F. Slice the bolillo rolls lengthwise and lightly butter the cut sides.
Toast the buttered rolls cut-side up on a baking sheet for 5–8 minutes until crisp and golden.
While the bread toasts, cook the chorizo in a skillet over medium heat for 5–7 minutes, breaking it up into crumbles. Drain excess fat if needed.
Warm the refried beans in a saucepan on medium-low heat, stirring occasionally to keep them smooth and pliable.
Spread a generous layer of refried beans over each toasted roll. Top with a thick layer of cooked chorizo, then sprinkle shredded cheese over each mollete.
Return to the oven and bake for 3–5 minutes, just until the cheese melts and bubbles.
Garnish with chopped cilantro and diced tomato. Season lightly with salt and pepper. Serve immediately while hot.
