Heat 1 tablespoon of avocado oil in a large nonstick skillet over medium heat. Add the diced nopales and cook, stirring occasionally, for 8–10 minutes until they release their gooey liquid and become tender and slightly dry.
Push the nopales to one side of the pan, add the remaining oil, then sauté the chopped onion and garlic over medium heat for 2 minutes until fragrant and translucent.
Add the diced tomato to the skillet. Stir together with the onion and garlic mixture. Cook for another 2–3 minutes, allowing the tomatoes to soften.
Reduce the heat to medium-low. Combine the vegetables and spread evenly around the pan. Beat the eggs in a bowl with salt and pepper, then gently pour over the vegetables in the skillet.
