Dissolve each flavored gelatin mix separately with 2 cups of boiling water in three different bowls, stirring until fully dissolved.
Pour the dissolved flavored gelatin mixtures into separate square or rectangular glass containers. Let them cool to room temperature, then refrigerate for 2-3 hours until completely set.
Once set, cut the flavored gelatins into 1/2-inch cubes. Gently remove the cubes and combine them in a large mixing bowl.
In a separate bowl, sprinkle the unflavored gelatin over 1 cup of cold water. Let it bloom for 5 minutes, then warm gently (microwave 30–40 seconds or heat in a small pan) until dissolved. Do not let it boil.
Whisk the evaporated milk, condensed milk, vanilla extract, and dissolved unflavored gelatin together until smooth and well combined.
