Beaten Rice Chivda is a crunchy, savory Indian snack seasoned with aromatic spices, perfect for tea time. This addictive vegetarian nibble is a family pantry staple and a crowd-pleaser at gatherings.
Heat 1 tablespoon of oil in a large, heavy skillet over medium heat. Add beaten rice (poha) and stir gently for 5-7 minutes until crisp, making sure it doesn't brown. Remove to a large mixing bowl.
In the same skillet, add 2 tablespoons oil over medium heat. Add mustard seeds and let them splutter for a few seconds, then immediately add the curry leaves and sliced green chilies. Stir for 30 seconds, being cautious of oil splatter.
Add raw peanuts, cashews, and coconut slices. Cook, stirring often, until nuts are lightly golden and coconut is fragrant, about 2-3 minutes.
Lower the heat to low. Add turmeric powder, salt, and sugar to the pan. Mix well to coat the nuts and coconut evenly with spices.
