Soak sliced rice cakes in warm water for 30 minutes to soften while preparing other ingredients.
Clean the fresh blue crab thoroughly, then crack and cut into manageable pieces. Slice bok choy, mushrooms, scallions, ginger, and mince the garlic.
Heat a large wok over medium-high and add 1 tablespoon sesame oil. Sauté ginger and garlic for 30 seconds until aromatic, then add crab pieces and stir-fry for 2 minutes.
