Heat vegetable oil in a deep pan over medium heat. Add cumin seeds and mustard seeds; sauté until they begin to crackle and release aroma, about 30 seconds.
Add sliced onion and cook over medium-high heat until golden and translucent, stirring frequently for even browning, around 3–4 minutes.
Stir in diced carrot and green peas, sautéing for an additional 2 minutes, then sprinkle in turmeric powder and mixed achar spice for full aromatic distribution.
