Goat curry is a straightforward, home-style preparation where bone-in goat simmers with onions, tomatoes, and warming spices. High in protein and naturally lean, it's a staple carnivore and family dinner choice.
Heat 3 tbsp vegetable oil in a large heavy-bottomed pot over medium-high heat until shimmering but not smoking.
Add chopped onions and sauté, stirring frequently, until golden and softened, about 6–8 minutes.
Stir in minced garlic and grated ginger; cook for 1–2 minutes until fragrant, then sprinkle in curry powder, ground cumin, ground coriander, red chili powder, salt, and black pepper. Mix well and toast spices for 1 minute.
Add bone-in goat meat and sear on all sides for 6–8 minutes, allowing the meat to brown and absorb the spice flavors.
Add chopped tomatoes and 2 cups water. Bring to a boil, then reduce heat to low. Cover and simmer gently for 90–120 minutes, stirring occasionally. Ensure goat meat becomes tender and the sauce thickens. Skim fat if desired.
Taste and adjust salt if needed. Serve hot, garnished as preferred.
