Paneer achari is a tangy vegetarian curry spiced with pickling spices like mustard and fenugreek seeds. This zesty, high protein vegetarian dish adds exciting flavors to family meals.
Heat 2 tbsp oil in a large skillet over medium heat. Add the mustard, cumin, fenugreek, fennel, and nigella seeds; sauté until the seeds sizzle and become aromatic (about 30 seconds). Do not let seeds burn.
Add chopped onions and sauté over medium-high heat for 5 minutes until softened and lightly golden, stirring frequently for even browning.
Stir in ginger and minced garlic; cook for another minute until fragrant, keeping heat moderate to avoid scorching.
Add chopped tomatoes, salt, turmeric, and red chili powder. Sauté over medium heat until tomatoes soften and oil begins to separate from the masala, about 7 minutes.
Lower heat to prevent curdling and mix in yogurt, blending well. Simmer gently for 2 minutes, stirring constantly.
Add diced paneer and bell pepper; toss well to coat without breaking paneer. Sprinkle garam masala, then cover and simmer on low for 4–5 minutes to absorb flavors, stirring once halfway.
Uncover, taste, and adjust salt or chili if needed. Simmer uncovered for 2 more minutes to slightly thicken the gravy. Serve hot, garnished with fresh herbs if desired.
