In a large pot over medium heat, cook the bacon slices until crisp. Remove bacon, crumble, and set aside—leave 1 tablespoon of bacon fat in the pot.
Add olive oil to the pot. Sauté onions, celery, and carrots over medium heat for 4–5 minutes until softened, stirring occasionally.
Add minced garlic, bay leaf, and dried thyme to the pot; cook for 1 more minute to release the aromas.
Pour in diced tomatoes, clam juice, and potatoes. Bring to a gentle boil, then reduce heat to low and simmer for 15–20 minutes until potatoes become fork-tender.
