Akki Roti Karnataka is a traditional Indian flatbread that's a healthy, whole-grain staple of everyday meals. This simple vegetarian bread is low in calories and the perfect family dinner accompaniment to any curry.
Combine rice flour, finely chopped onion, grated carrot, fresh coriander leaves, salt, minced green chili, and cumin seeds in a large mixing bowl.
Slowly add water, starting with half the cup, then gradually incorporate the rest as needed, mixing to form a soft but non-sticky dough.
Divide the dough into 4 equal portions; oil your palms lightly and shape each portion into a smooth ball.
Take one dough ball, flatten it between oiled palms, then gently press it onto a sheet of parchment or banana leaf, shaping a thin, even round about 6” diameter.
Heat a non-stick skillet over medium heat. Transfer the shaped roti onto the hot skillet, drizzle with a little oil around the edges, and cook for 2 minutes. Flip and cook the second side until golden spots appear and the roti feels cooked (total 3–4 minutes per roti). Repeat for all portions.
