Thick winter melon slices are braised until translucent and infused with a savory broth. This vegetarian, healthy dish is extremely low calorie and ideal for calorie deficit or bariatric meal plans.
Prepare the winter melon by peeling, seeding, and slicing it into thick pieces; cut tofu and slice mushrooms as directed.
Heat sesame oil in a large skillet or wok over medium heat. Add ginger and the white parts of the scallions; sauté 1 minute until fragrant.
Add sliced winter melon and shiitake mushrooms. Stir-fry for 2–3 minutes, allowing the melon’s surface to brighten.
Pour in the vegetable broth and bring to a gentle simmer. Reduce heat to low, cover, and braise for 15–20 minutes until winter melon turns nearly translucent.
Stir in tofu cubes, soy sauce, and white pepper. Dissolve cornstarch in 2 tbsp water, then stir into the pan and simmer 2–3 minutes more until sauce slightly thickens.
Turn off heat and sprinkle in green onion tops. Rest uncovered for 3 minutes before serving for optimal flavor and texture retention.
