Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a mixing bowl, combine blanched almond flour, all-purpose flour, powdered sugar, lemon zest, cinnamon, and salt; mix well to ensure even distribution of flavors.
Add eggs one at a time to the dry ingredients, mixing thoroughly after each addition, until a soft, smooth dough forms.
Pinch off small portions of dough, about one tablespoon each, and roll into oval shapes resembling fava beans; arrange them spaced apart on the baking sheet.
Bake at 350°F for 15–18 minutes, monitoring closely so cookies become lightly golden on the bottoms but remain soft inside. Allow to cool on the tray for 5 minutes before transferring to a wire rack to finish cooling completely.
