Rice cooked with a medley of shrimp, clams, and fish in a savory tomato-chile broth. This protein-packed seafood paella-style dish makes an impressive, healthy family dinner.
Heat olive oil over medium heat in a large, deep skillet or paella pan. Sauté onions, bell pepper, and garlic for 5 minutes until soft and fragrant.
Stir in the rice, smoked paprika, cumin, and red chile flakes. Cook, stirring, for 2 minutes to toast rice and bloom spices.
Add diced tomatoes and chicken broth; season with salt and black pepper. Bring to a gentle boil, then lower heat, cover, and simmer for 12 minutes.
Nestle the fish chunks and clams into the rice, cover, and cook on low for another 10 minutes. Add shrimp and peas, cover again, and cook until rice is tender and seafood is just cooked through, 6–8 minutes.
Remove the pan from heat. Let rest uncovered for 5 minutes before serving. Garnish with chopped cilantro and serve with lime wedges.
