Festive prosperity fried rice loaded with shrimp, pork, and vegetables is a celebration staple. A high protein, family dish with fresh, colorful ingredients.
Heat 1 tablespoon of vegetable oil in a large wok or nonstick skillet over medium-high heat. Add the eggs and scramble until just set, then remove eggs to a plate to avoid overcooking.
Add another tablespoon of oil to the pan. Increase heat to high and quickly sear the shrimp until pink and just cooked through, about 1–2 minutes. Remove shrimp and set aside.
Add the remaining oil. Stir-fry pork over high heat until browned and cooked through, about 2–3 minutes. Add bell pepper, carrot, and peas, and stir-fry until vegetables are slightly tender yet crisp, about 2 minutes.
Push the ingredients to the sides of the pan. Add the cold cooked rice into the center. Toss all together, pressing the rice gently to break up any clumps, and fry for 2–3 minutes until the rice is hot and slightly toasted.
Return cooked eggs and shrimp to the pan. Pour in soy sauce, oyster sauce, sesame oil, white pepper, and salt, mixing well until all ingredients are evenly coated and heated through. Adjust seasoning if desired, then stir in green onions and serve immediately.
