Nutty black rice is simmered until it becomes a striking purple porridge with a slightly sweet flavor. This vegetarian, healthy family dish is rich in antioxidants and offers a visually stunning breakfast.
Rinse 1 cup of black rice under cold water several times until the water runs mostly clear, removing excess starch.
In a large pot, combine the rinsed black rice with 7 cups of water. Bring to a boil over medium-high heat.
Reduce heat to low and simmer, uncovered, for 60–75 minutes. Stir every 10–15 minutes to prevent rice from sticking to the bottom and to help break down the grains.
Around the 60-minute mark, check the consistency; the congee should be creamy with most grains burst open and the porridge a deep purple color. Add extra hot water, ¼ cup at a time, if too thick.
Stir in 1 tablespoon sugar and ½ teaspoon salt. Simmer for another 5 minutes, then taste and adjust seasoning as needed before serving hot.
