Sweet Chinese crepe filled with red bean paste is a comforting street food treat. A vegetarian, family-friendly snack with fresh, naturally sweet flavor.
In a medium mixing bowl, whisk together the flour, sugar, and salt. Add water gradually while stirring to form a smooth batter.
Crack in the eggs and beat the mixture until well combined with no lumps; let rest at room temperature for 10 minutes.
Heat 1/2 tbsp of oil in a nonstick skillet over medium heat. Pour in 1/4 cup of batter and quickly swirl to cover the base thinly.
Cook the crepe on medium heat until the edges lift and the bottom is lightly golden, about 2 minutes. Flip carefully and heat for 1 minute more.
Spread 1/4 cup of red bean paste on one half of the crepe while still on the pan, then fold over and press gently.
Continue with the remaining batter and filling, adding a little oil to the pan each time. Serve warm or at room temperature.
