Fine-shredded cabbage is stir-fried with dried chilies and Sichuan peppercorn until slightly charred. This vegetarian, low calorie family side is fiery, crunchy, and addictively good.
Finely shred 6 cups of green cabbage and slice 2 cloves of garlic; break the dried chilies into halves.
Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat until shimmering.
Add Sichuan peppercorns and dried red chilies to the hot oil, stir-frying for about 30 seconds until fragrant but not burnt.
Quickly add sliced garlic and stir for 10 seconds, then immediately add the shredded cabbage.
Stir-fry cabbage over high heat for 3–4 minutes, letting edges char slightly while tossing to prevent burning.
Season with soy sauce, salt, and sugar; continue stir-frying for 1–2 minutes until cabbage is crisp-tender and lightly browned.
Remove from heat and serve immediately for best crunch and aroma.
