Savory Chinese crepes with egg and crispy wonton make a protein-rich breakfast wrap. A fresh, family street food with bold, satisfying flavors.
In a large bowl, whisk together all-purpose flour, water, and 1 egg until a smooth batter forms with no lumps.
Finely chop scallions and cilantro. Set aside. Beat the remaining eggs in a separate bowl.
Heat a nonstick skillet over medium heat and brush with a little neutral oil. Pour in a thin layer of the crepe batter, swirling to coat evenly.
Immediately pour a beaten egg over the top and quickly spread it right to the edges. Sprinkle chopped scallions and cilantro over the egg.
Cook for 1-2 minutes until the bottom of the crepe is golden and the egg is mostly set. Meanwhile, in another pan, fry wonton wrappers in oil on medium-high heat until crispy and golden, about 30 seconds per side. Drain and keep warm.
Brush the cooked crepe (egg side up) with light soy sauce and black bean sauce. Drizzle with chili oil if desired, then sprinkle with sesame seeds and a pinch of white pepper.
Lay 2 crispy wonton wrappers in the center of the crepe. Using a spatula, gently fold the crepe over the wrappers to form a wrap. Press slightly to hold the shape.
Repeat with remaining batter and fillings. Serve immediately while hot for the best texture.
