Sautéed sweet Italian peppers with olive oil and salt are a Neapolitan vegetarian staple. This fresh mediterranean side is healthy, light, and a family favorite alongside grilled meats.
Wash the Friggitelli peppers thoroughly and pat them dry. Remove any stems if desired, but leave peppers whole to preserve their texture.
Heat a large skillet over medium-high heat for 1 minute, then add the olive oil. Swirl the pan to evenly coat the bottom.
Add the Friggitelli peppers to the hot oil in a single layer, making sure not to crowd the pan. Sauté undisturbed for 2 minutes to allow some blistering.
Toss and turn the peppers every 1–2 minutes, cooking for a total of 7–8 minutes, until the skin is blistered and the flesh is tender, but peppers are still vibrant and not collapsed. Adjust heat to medium if browning too quickly.
Season the peppers with sea salt while still hot, tossing well. Serve immediately as a side or room temperature, retaining their slight crunch.
