Cherry tomatoes pressed into golden focaccia dough burst with sweetness as they roast. A vegetarian mediterranean bread that's fresh, healthy, and perfect for family sharing.
Combine warm water and active dry yeast in a large bowl, letting it sit for 5 minutes until foamy.
Add the all-purpose flour and 1 tsp kosher salt to the yeast mixture. Mix until a shaggy dough forms, then knead for 5–7 minutes until smooth. Cover the bowl and let the dough rise at room temperature until doubled, 60–90 minutes.
Generously oil a rimmed baking sheet with 2 tbsp of the olive oil. Turn the dough onto the sheet and gently stretch it to roughly a 9 x 13 inch rectangle using your hands. Let rest for 20 minutes, covered with a towel.
Preheat the oven to 425°F (220°C). With oiled fingers, press deep dimples all over the dough. Scatter cherry tomatoes evenly, pressing them into the dough, and sprinkle with rosemary, the remaining salt, and drizzle the remaining olive oil over the top.
Bake for 22–25 minutes until the focaccia is golden brown with crisp edges. Let cool slightly before slicing and serving.
