Pot Biryani is a fragrant vegetarian layered rice dish with aromatic spices, saffron, and seasonal vegetables. This wholesome family meal is satisfying, flavorful, and perfect for vegetarian gatherings.
Rinse basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
Soak saffron threads in the warm milk and let them infuse while you prep the vegetables.
Heat ghee on medium in a heavy pot. Add cumin seeds, cloves, cardamom, cinnamon stick, and bay leaf. Sauté until fragrant, about 1 minute.
Add sliced onions and cook over medium-high heat until golden brown, stirring frequently to prevent burning (about 8 minutes).
Stir in chopped vegetables, cashews, raisins, turmeric, chili powder, and 1/2 tsp salt. Cook for 4–5 minutes, then add yogurt, stirring constantly for 2 minutes to prevent curdling.
Sprinkle garam masala and half each of the cilantro and mint. Add drained rice evenly over the vegetables without stirring.
Gently pour in 3.5 cups of hot water along with the rest of the salt, then drizzle saffron milk on top. Cover tightly with a lid or foil.
Reduce heat to low and cook for 25–30 minutes without opening. When liquid is absorbed, turn off the heat and let it rest with the lid on for another 10 minutes.
Fluff the biryani gently with a fork, garnish with remaining cilantro, mint, fried onions (optional), and serve hot straight from the pot.
