Eggs poached in a vibrant tomato sauce with garlic and basil is Italian simplicity at its best. A vegetarian high protein mediterranean dish ideal for healthy family breakfasts and 1500 calorie plans.
Finely dice the onion and thinly slice the garlic cloves.
Heat olive oil in a large nonstick skillet over medium heat. Add the onion and sauté for 3 to 4 minutes until translucent.
Add the garlic and cook for 1 minute, stirring frequently to prevent burning.
Pour in the whole peeled tomatoes with their juices, breaking them up with a spoon. Stir in kosher salt, black pepper, and red pepper flakes. Simmer uncovered over medium-low heat for 12–15 minutes until slightly thickened.
Lower the heat to medium-low, make small wells in the sauce, and crack the eggs in. Cover and poach for 6–8 minutes, until the egg whites are set and yolks remain runny.
Tear the basil leaves and scatter over the eggs. Serve immediately with toasted crusty bread if desired.
