Golden pumpkin is simmered and blended into a velvety, naturally sweet soup. This healthy, vegetarian family soup is low calorie, diabetic-friendly, and comforting in cooler months.
Heat a large pot over medium heat and add sesame oil. Sauté onion, ginger, and carrot for 3–4 minutes until fragrant and onions begin to soften.
Add the pumpkin and potato to the pot, stirring to coat with the aromatics. Cook for an additional 2 minutes to lightly caramelize the pumpkin.
Pour in the vegetable broth and soy sauce. Increase heat to high and bring to a boil, then immediately reduce to a gentle simmer.
Simmer the mixture, partially covered, for 18–22 minutes, or until pumpkin and potatoes are completely tender.
Remove from heat and use an immersion blender to carefully blend the soup until silky smooth. Adjust seasoning with salt and white pepper to taste; serve hot.
