The classic taquería salsa made from roasted tomatillos, árbol chiles, and garlic. This vegetarian, fresh condiment is the essential family taco companion with bold, balanced heat.
Preheat a dry skillet over medium-high heat. Arrange tomatillos on the skillet and roast for 6–8 minutes, turning occasionally until charred and softened.
Add dried árbol chiles to the skillet and toast for 20–30 seconds, stirring constantly; do not let them burn.
Remove chiles and tomatillos from the skillet and let them cool. Place garlic cloves (unpeeled) on the skillet and roast for 2 minutes, turning once, until fragrant. Peel garlic when cool.
In a blender or food processor, combine roasted tomatillos, toasted chiles, peeled garlic, onion, and salt. Add 3 tbsp water for proper consistency.
Blend until very smooth. With the blender running on low, stream in vegetable oil to emulsify. Taste and adjust salt if needed. Serve at room temperature.
