Kolhapuri Tambda Rassa is a traditional Indian bread with authentic flavors and a satisfying texture. This versatile accompaniment is a family meal essential that pairs perfectly with curries and chutneys.
Heat 2 tbsp of vegetable oil in a heavy-bottomed pan over medium-high heat. Add sliced onions and sauté until golden brown, stirring frequently for even caramelization.
Add ginger and crushed garlic, cooking for 2 minutes until fragrant. Stir in tomatoes and cook until they soften and the oil separates on the sides.
Add goat meat pieces and sear over high heat until all sides are browned, about 8 minutes, then lower the heat to medium.
Mix in all spice powders: Kashmiri red chili, Kolhapuri masala, turmeric, coriander, cumin, and salt. Cook for 4 minutes, stirring to allow the spices to bloom and coat the meat.
Pour in 2 cups of water, bring to a boil, then reduce to a gentle simmer. Cover and cook for 50–60 minutes, or until the meat is tender and the red broth (tambda) has developed a deep color and fatty float.
Finish with the remaining oil and finely chopped cilantro, stir, and simmer uncovered for 5 more minutes for flavors to meld. Serve hot alongside traditional breads, curries, or chutneys.
