Preheat oven to 375°F (190°C) and grease a 9-inch round baking dish with 1 tbsp olive oil.
Peel and slice potatoes into 1/8-inch rounds. Boil in salted water over medium heat for 8–10 minutes until just fork-tender, then drain thoroughly.
In a large bowl, whisk eggs with salt, black pepper, chopped parsley, and dried oregano until fully combined.
Gently fold the cooked potatoes, mozzarella, and half the Parmesan into the egg mixture. Mix carefully to keep slices intact.
Layer the mixture into the prepared dish. Press gently, drizzle with remaining olive oil, and top with remaining Parmesan. Bake for 35–40 minutes until golden and crisp on top. Cool 10 minutes before slicing.
