Tender beef and silken tofu are simmered together in a clay pot with a savory sauce until bubbling hot. This high protein, comforting family dish combines two excellent protein sources in one warming bowl.
Mix beef slices with 1/2 tablespoon soy sauce, 1 teaspoon cornstarch, and a pinch of black pepper; marinate for 10 minutes.
Heat 1 teaspoon sesame oil in a clay pot over medium-high heat. Add marinated beef and stir-fry until just browned but not fully cooked. Remove and set aside.
Add another teaspoon of sesame oil to the pot. Sauté onions, mushrooms, garlic, and ginger over medium heat until soft and fragrant, about 3–4 minutes.
Pour in remaining soy sauce, oyster sauce, sugar, water, and stir to combine. Gently slide in cubed silken tofu; simmer gently on low heat for 5 minutes to avoid breaking the tofu.
Return beef to the pot, simmer for 3–5 minutes until sauce thickens slightly and beef is just cooked through. Taste and adjust seasoning if needed. Garnish with green onions and serve bubbling hot.
