Preheat a large nonstick or cast iron skillet over medium-high heat for 2 minutes until hot.
Add 1 tablespoon of vegetable oil to the skillet, swirling to coat the surface evenly.
Place the cecina slices in a single layer, cooking for 1½–2 minutes per side until browned and edges begin to crisp. Transfer to a plate and cover loosely with foil.
Reduce heat to medium-low. Add the remaining 1 tablespoon oil to the pan if needed, then carefully crack eggs into the skillet, spacing them apart.
Cook eggs to desired doneness, 2–3 minutes for sunny side up or until whites are just set but yolks remain slightly runny. Sprinkle with sea salt and black pepper. Serve eggs immediately alongside hot cecina.
