Aromatic and colorful, Muradabadi Biryani layers basmati rice with spiced vegetables and whole spices for a complete vegetarian feast. This family-friendly dish is perfect for celebrations and everyday meals alike.
Rinse basmati rice until water runs clear, then soak for 30 minutes; drain thoroughly before cooking.
Heat ghee or oil in a heavy-bottomed pan on medium; add cumin seeds, whole cloves, cinnamon stick, and bay leaf; sauté until aromatic, about 1 minute.
Add thinly sliced onions and green chilies, sauté on medium-high until the onions are golden and caramelized, about 5–7 minutes.
Stir in ginger garlic paste, cook for 1 minute, then add chopped tomatoes and cook until soft; add turmeric, red chili powder, and biryani masala—cook until a thick masala forms and ghee releases at the edges.
Add mixed vegetables and sauté gently for 4–5 minutes; stir in yogurt, 1/2 the cilantro and mint, and salt; cook covered on low for another 5 minutes to blend flavors.
In a separate large pot, bring water to a boil; add soaked rice and cook until just 70% done—drain immediately to prevent overcooking.
Layer the cooked vegetables evenly in the pan, then top with parboiled rice; sprinkle lemon juice and the remaining cilantro and mint over the top.
Cover tightly with a lid or aluminum foil; cook on very low heat (dum) for 20–25 minutes to steam and infuse flavors without burning the base.
Let the biryani rest for 10 minutes before opening; gently fluff with a fork, making sure not to break the rice grains.
Serve hot with yogurt, raita, or your favorite chutney.
