Clam soup in a fragrant broth of wine, garlic, and herbs from the Italian coast. This high protein mediterranean dish is a fresh, healthy family dinner ideal for a calorie deficit plan.
Rinse and scrub the clams thoroughly under cold water, discarding any open or damaged shells.
Heat olive oil in a large pot over medium heat; add chopped onion and celery. Sauté for 4–5 minutes until fragrant and translucent.
Add minced garlic and cherry tomatoes; cook for 2 minutes, stirring to prevent burning.
Pour in dry white wine and increase heat to high; simmer for 3 minutes to reduce alcohol and enhance flavor.
Pour in chicken broth, bring to a boil, then add clams. Cover and cook on medium-high heat for 6–8 minutes, until all clams open. Discard any clams that remain closed.
Season with salt, black pepper, and crushed red pepper flakes. Immediately remove from heat and stir in chopped fresh parsley before serving.
