Chana Masala is a robust Indian chickpea dish packed with plant-based protein and fiber. This healthy vegetarian preparation supports weight loss, PCOS diet goals, and makes a satisfying family meal.
Heat 2 tbsp vegetable oil in a large skillet over medium heat until shimmering.
Add diced onion and sauté for 4-5 minutes, stirring frequently until golden brown.
Stir in minced garlic, grated ginger, and chopped green chili. Cook for 1 minute until fragrant, reducing heat to prevent burning.
Add chopped tomatoes and cook for 6-7 minutes, stirring often, until the tomatoes soften and break down.
Mix in ground coriander, cumin, garam masala, paprika, turmeric, salt, and black pepper. Cook the spices with the tomato mixture for 2 minutes to develop aroma.
Add drained chickpeas and 0.5 cup water; stir to combine. Cover and simmer on low heat for 12-15 minutes, stirring once or twice to prevent sticking.
Uncover and mash some chickpeas with the back of the spoon for a thicker texture; keep simmering uncovered for another 3-5 minutes to thicken if needed.
Turn off the heat. Stir in lemon juice and adjust seasoning to taste. Serve warm garnished with fresh cilantro if desired.
