White beans stewed with tomatoes, chiles, and herbs in a savory Mexican preparation. This vegetarian, high protein family dish is rich in fiber and makes a healthy, comforting meal.
Soak the dried white beans overnight in a large bowl with enough cold water to cover them by at least 2 inches.
Drain and rinse the beans. In a large heavy pot, add soaked beans and cover with fresh water by 2 inches. Bring to a boil over high heat, then reduce to low and simmer uncovered for 45 minutes until just tender.
While beans cook, heat olive oil in a separate pan over medium heat. Sauté chopped onion for 4-5 minutes until translucent, then add carrots, celery, and cook for 3 minutes more, stirring occasionally.
Add minced garlic, diced poblano chile, and tomatoes to the sautéed vegetables. Stir in ground cumin, dried oregano, and cook for 5 more minutes until tomatoes start to break down.
Transfer the sautéed vegetable mixture to the beans. Add bay leaf, kosher salt, and black pepper. Simmer uncovered over low heat for another 40-50 minutes, stirring occasionally, until the beans are creamy and flavors meld.
Adjust salt to taste, remove bay leaf, sprinkle chopped cilantro on top, and serve hot.
