Chopped pork ribs are marinated with fermented black beans and garlic, then steamed until succulent. A classic dim sum family favorite, this protein-rich dish requires minimal effort for maximum umami impact.
Pat the pork ribs dry and place them in a large mixing bowl.
Add mashed fermented black beans, minced garlic, soy sauce, Shaoxing wine, sugar, white pepper, and sesame oil to the ribs. Toss thoroughly to coat all pieces evenly.
Sprinkle cornstarch over the marinated ribs and mix well to ensure each piece is lightly coated; let sit for 15–30 minutes to marinate and tenderize the meat.
Arrange the ribs in a single layer on a heatproof plate and scatter sliced green onions over the top.
Steam the plate of ribs over high heat in a covered steamer for 25–30 minutes, until the pork is tender and cooked through. Serve hot, garnished with extra green onions if desired.
