Crispy, spiced, and utterly delicious, Golgappa is a classic Indian snack loved across the country. This vegetarian favorite is perfect for family snack time, parties, and festive occasions.
In a large bowl, mix semolina, all-purpose flour, baking soda, and a pinch of salt. Slowly add water and knead into a stiff dough. Cover and let it rest for 20 minutes.
After resting, knead the dough again briefly. Divide it into small portions and roll each one thinly on a lightly floured surface, ensuring even thickness for crispiness.
Cut rolled dough into small discs using a cookie cutter or small bowl (about 2-inch diameter). Cover with a damp cloth to prevent drying.
Heat oil in a deep frying pan over medium-high heat. Fry 4-5 discs at a time, gently pressing each with a slotted spoon so they puff up. Adjust heat to maintain steady bubbling; fry until golden and crisp. Drain on paper towels.
For the filling, mix mashed potatoes, chickpeas, black salt, cumin powder, and chili powder. In a separate bowl, prepare spicy water with tamarind pulp, sugar, additional cumin powder, mint, cilantro, and cold water. Stir to dissolve and chill.
To serve, gently crack the top of each puri, fill with potato-chickpea mixture, and dip into chilled spiced water before eating.
