Chewy buckwheat noodles are served chilled with a tangy, slightly sweet dressing and fresh vegetables. This refreshing family dish from Northeast China is healthy, unique, and perfect for summer weight loss meals.
Boil a large pot of water over high heat. Add buckwheat noodles and cook according to package instructions (usually 4–5 minutes) until tender but chewy.
Immediately drain the noodles, rinse well under cold running water, and set aside in a colander to fully cool. For best texture, toss noodles with ice cubes and drain again.
While noodles cool, slice cucumber and carrot into thin matchsticks. Shred cooked chicken breast and slice the hard-boiled eggs in half.
In a mixing bowl, whisk together rice vinegar, soy sauce, sugar, sesame oil, finely minced garlic, chili oil, and salt until sugar dissolves and dressing is smooth.
Assemble: Divide cold noodles into bowls. Top each serving with the vegetables, chicken, and half an egg. Pour about 2–3 tbsp of dressing over each and toss just before eating. Serve immediately.
