Firm dried tofu strips are stir-fried with colorful peppers in a savory sauce. This vegetarian, high protein family dish is healthy, low calorie, and perfect for clean eats or keto plans.
Slice the firm dried tofu into thin strips and soak in warm water for 10 minutes if very firm; drain and pat dry to remove excess moisture.
Cut the red, yellow, and green bell peppers into thin strips. Slice the scallions and mince the garlic cloves.
Heat the peanut oil in a large skillet or wok over medium-high heat until shimmering but not smoking.
Add the tofu strips and stir-fry for 2-3 minutes, keeping the heat medium-high to brown the surfaces without burning. Remove the tofu and set aside.
Reduce heat to medium. Add the garlic and scallions, stir-fry 30 seconds until aromatic, then add all peppers. Stir-fry for 2-3 minutes to keep peppers slightly crisp.
Return the tofu to the pan; add soy sauce, oyster sauce, sugar, and black pepper. Toss everything well and cook 2 more minutes to glaze the tofu.
Drizzle with sesame oil, stir to combine, and immediately remove from heat to prevent overcooking.
Serve hot as a main or side, with optional extra scallions on top.
