Basundi is a traditional Indian sweet that embodies the rich confectionery heritage of the subcontinent. This beloved dessert is a family favorite at festivals, weddings, and celebrations.
Pour the whole milk into a large, heavy-bottomed pan and set over medium heat. Bring to a simmer, stirring often to prevent scorching.
Reduce the heat to medium-low. Let the milk simmer, stirring and scraping the sides frequently, until reduced by about half (this takes approximately 40–45 minutes).
Stir in the sweetened condensed milk and granulated sugar. Continue simmering for another 10–15 minutes, stirring regularly for even thickening.
Add the cardamom powder, saffron strands, sliced almonds, and sliced pistachios. Mix well, and cook for 5 more minutes to blend flavors and infuse the milk.
Remove from heat and stir in the rose water. Let the Basundi cool completely, then chill in the refrigerator for at least 2 hours before serving for best texture.
