Pongal Festive is a special-occasion Indian dish prepared with care and aromatic spices for festive gatherings. This flavorful preparation is a cherished family tradition during celebrations and holidays.
Wash the rice and moong dal thoroughly, then soak them together in water for 15 minutes.
In a large saucepan, add the rice, moong dal, water, and milk. Bring to a boil on medium heat, then reduce to low and cover. Cook for 30–35 minutes, stirring occasionally to prevent sticking and ensure even cooking.
While the mixture simmers, heat ghee in a separate small skillet over medium-low. Add cumin seeds, black peppercorns, finely grated ginger, cashew nuts, and curry leaves, sautéing until cashews turn golden and spices release their aroma (about 3 minutes).
Stir the tempered mix into the cooked rice-dal pot, add salt, and gently fold everything together. Simmer on low heat for an additional 5 minutes to allow flavors to meld and the pongal to achieve a creamy texture.
Serve hot, garnished with a few more fried cashew nuts and a drizzle of ghee if desired. Pongal is best enjoyed immediately for authentic festive warmth and texture.
