Roast the poblano peppers directly over a gas flame or under a broiler until their skins are blistered and blackened, turning occasionally for even charring (about 8-10 minutes).
Transfer roasted peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes to make peeling easier.
Peel the charred skins off the peppers, remove the stems and seeds, then slice the peppers into thin strips.
Heat the vegetable oil in a large skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and just turning golden, about 5 minutes.
