Slice firm tofu into thin strips. Wash and thinly slice shiitake mushrooms, bamboo shoots, and carrot.
In a large pot over medium-high heat, add chicken stock and bring to a gentle boil.
Add mushrooms, bamboo shoots, and carrots. Simmer for 8 minutes until vegetables soften.
Mix soy sauce, rice vinegar, white pepper, and salt in a small bowl. Add the mixture to the soup. Stir cornstarch into 1/4 cup cold water and add, simmering while stirring until slightly thickened—about 3 minutes.
Add tofu and simmer gently for 3 more minutes. Lower heat to minimum. Beat eggs well, then slowly drizzle into soup while stirring in one direction for silky egg ribbons.
Turn off heat. Add sesame oil and sliced scallions. Stir and serve immediately.
