Paneer Kulcha is a traditional Indian bread with authentic flavors and a satisfying texture. This versatile accompaniment is a family meal essential that pairs perfectly with curries and chutneys.
In a large bowl, combine all-purpose flour, baking powder, baking soda, salt, and sugar. Mix thoroughly for even distribution.
Add yogurt and warm water gradually, mixing until a soft, slightly sticky dough forms. Knead for 5–6 minutes until smooth. Cover and let rest for 45 minutes.
Meanwhile, prepare the paneer filling: In another bowl, mix crumbled paneer, onion, cilantro, green chili, and garam masala. Stir well to blend, ensuring the mixture is evenly seasoned.
Divide the dough into 6 equal balls. Flatten each slightly, then place 2–3 tablespoons of the paneer filling in the center. Carefully seal and shape into a ball to enclose the filling.
On a lightly floured surface, gently roll each ball into a thick oval or round disc (about 1/4 inch thick), being careful not to tear the dough and expose the filling.
Heat a heavy skillet or tawa over medium-high. Place a kulcha on the hot surface. Cook for 2 minutes until bubbles form on the bottom, then flip. Cook another 2–3 minutes pressing gently for even browning.
Brush the hot kulcha immediately with ghee or melted butter. Transfer to a cloth-lined basket, and serve hot with curries or chutneys.
