Rinse the lampredotto (beef tripe) thoroughly under cold water, removing any grit; set aside.
Bring a large pot of salted water to a boil, then add lampredotto, onion, carrot, and celery. Reduce heat to a gentle simmer and cook for about 1.5–2 hours, skimming foam as needed.
While the lampredotto cooks, make salsa verde: blend parsley, hard-boiled egg, olive oil, vinegar, capers, garlic, salt, and black pepper until smooth. Taste for balance and adjust seasoning if needed.
Once tender, remove lampredotto from the pot and slice thinly while still warm to retain moisture; keep the cooking broth aside.
Split sandwich rolls, dip one half in the hot broth for extra flavor, pile sliced lampredotto generously, and top with salsa verde. Serve immediately while warm.
