Kulfi falooda combines dense, creamy Indian ice cream with rose syrup, vermicelli, and basil seeds. This indulgent dessert is a refreshing family treat during summer months.
Soak the basil seeds in 1/2 cup water for at least 20 minutes, allowing them to swell and become gelatinous.
Boil vermicelli in 2 cups of water for 3-4 minutes until soft but not mushy, then drain and rinse with cold water to stop cooking.
Mix whole milk and rose syrup together in a bowl, stirring until fully combined and chilled.
Layer soaked basil seeds and cooked vermicelli evenly in serving glasses, then pour the rose milk mixture over them.
Add a kulfi piece to each glass, sprinkle with chopped pistachios and almonds, and finish with ice cubes for extra chill. Serve immediately.
